Chips, soda cause weight gain, even in moderation

As a typical college eater, Peter Farragher, an accounting senior, said it is tough to maintain a healthy diet with a busy schedule, and convenience sometimes leads to eating the worst food.

While he could be healthier, eating fruits and vegetables can be tough because they go bad before he finds time to eat them, and delivery services usually don’t offer them, he said. He tries to avoid eating fast food.

“I eat a lot of pasta and food that is cheap and doesn’t spoil so easily,” he said.

While conventional wisdom recommends that everything in moderation is okay as far as dieting, findings in a recent study published in The New England Journal of Medicine suggest that the quality of items is more important than the quantity.

Dariush Mozaffarian, associate professor of medicine and epidemiology at the Harvard School of Public Health and one of the authors of the study, said in an email the quality of a diet is strongly linked to long-term weight gain.

“This suggests that the path to eating fewer calories is not to simply count calories, but to focus on consuming a more healthy diet in general,” he said.

Mozaffarian said the study was prompted because prior research often has not focused on factors associated with long-term weight gain, but instead treatment after weight gain has occurred.

“We wished to study what diet and other lifestyle factors might prevent weight gain in the first place,” he said.

According to the study, the foods that were associated with the most long-term weight gain in individuals were potato chips, potatoes, sugar-sweetened beverages and processed meats.

However, Mozaffarian said decreases in vegetable consumption in the population are a bigger problem than the potato chip finding. The consumption of vegetables in the study actually was associated with long-term weight loss.

Rather than focusing on fat or sugar content in foods, he said consumers should eat more minimally processed foods and focus on carbohydrate quality by reducing sugars, sweetened drinks, starches and refined grains.

Kurt Kwiatkowski, corporate chef for Culinary Services, said while some students are trying to make better diet choices, they still are selling a lot of foods such as burgers, fries and pizza.

However, Culinary Services as a whole is working to prepare meals in different ways that are more healthy, such as roasting foods rather than deep-frying them. Students also can go online to see the calorie count of different meal options.
